Gluten-free Purple sweet potato & Orange Cake


<Serving: 9-inch round pan>

Preparations:

Pre-heat oven to 350F

Grease the cake pan

Ingredients:

3 cups Mashed purple sweet potato

1/2 Orange, sliced

50ml Fresh Orange Juice

1 tbsp Orange zest

50 ml Coconut oil

3/4 cup Coconut sugar

2 large Eggs

2/3 cup Coconut flour

Instructions:

1. Cut the purple sweet potatoes and boil them until tender. Peel the skin and mash the sweet potatoes.


2. In a large bowl, mix orange juice, coconut oil, coconut sugar, and eggs well. Pour the ingredients into the mashed sweet potatoes. Add coconut flour and mix well.

3. Add orange zest and mix well. Spoon batter into the prepared cake pan.

4. Decorate sliced orange and bake at 350 degrees F. for 40 minutes. Cool completely.
